  1. My situation is similar and here's how my set-up works. First, I use the HDMI output of the Mac Mini to a HD TV (mine is 70"), it works as an awesome monitor from across the room. Second, I downloaded the Rowmote Pro 3.3 app for my iPhone and iPad (I think the app costs $0.99). Third, I downloaded the free Rowmote Helper utility to the Mac Mini. The end result is my iPhone or iPad serve as a remote, trackpad (pretty cool) and keyboard. I have heard there is an upcoming app that would allow an iPad to also serve as a monitor to a Mac Mini.
