  2. I use an Airport Express-N to stream music into my bathroom into a Bang and Olufsen Beosound 3200. It sounds great to me. Maybe I am jittering synchronously in the shower.
  3. I would recommend a Macbook Air to control your headless mini. Screen sharing is much more responsive than any iPad application. Be mindful that there are a few glitches with running headless, bluetooth mice do not work, Safari crashes. But this works for me in concert with using the remote application.
  4. In iTunes this is very easy, add the contents of the 2 drives/Drobos to an iTunes library that you create on your Music Server internal hard drive. Unclick the box in advanced preferences that says copy when adding to library. This keeps the music on your NAS but uses the new library to keep track of your songs. Then add the music on your drives to your library. iTunes will access your music as one large library and will be played by iTunes. Because you have made a new library you will have to restart sharing and adjust your remote. It is a little more complicated to use Amarra, Pure Music etc, but can be done with Applescripts.
