I'd be careful about going too basic on the NAS. Depending on the server software that you install, you may well notice the relative lack of computing power on a very basic NAS. It may not be able to maintain a high def stream, and indexing will be slower. I have two NAS systems, one using a QNAP 659 pro, and the other using a Synology 712+. There is a huge difference. The Synology really doesn't cut it on high def files. My QNAP is fantastic. Based on my experience, I would get as powerful a processor as I could afford, even in a two bay system.
